Tex-Mex
德州-墨西哥菜 或 德墨菜（英語：Tex-Mex）是一種美國菜，得名於德州式（Texan）和墨西哥式（Mexican）的的縮寫。該菜系起源於得克薩斯州德哈諾人的菜餚，現已流行於美國全國。其可以歸類於美國西南部飲食。[1][2][3]
特點[編輯]
Tex-Mex菜餚的特點是大量使用碎奶酪、豆類、肉類（尤其是雞肉、牛肉和豬肉）、辣椒和香料，以及麵粉薄餅。有的菜餚則不使用墨西哥薄餅，例如墨西哥烤肉（Fajita）。
相比墨西哥菜，Tex-Mex菜餚更多地使用奶酪，例如Chile con queso即為一道墨西哥玉米片蘸融化奶酪的菜。[4]此外，Tex-Mex菜餚還會使用一些墨西哥菜中不常見的香料，例如孜然，它是由西班牙移民從加那利群島引進得克薩斯的。[5]

Tex-Mex菜餚起源於德哈諾人，即墨西哥血統的得克薩斯人。得克薩斯曾是新西班牙和後來墨西哥的一部分，他們的菜餚結合了墨西哥本土菜和西班牙菜的特點。從聖安東尼奧、下格蘭德河谷、艾爾帕索之間德的得克薩斯南部地區，這些菜餚都大致相同，且受到鄰近的墨西哥北部各州烹飪方式的影響。牧場遍布得克薩斯南部和墨西哥北部，因而牛肉、燒烤和玉米餅一直是常見且受歡迎的食品。[6]20世紀，隨着美國產品變得廉價且易得，Tex-Mex菜餚開始採用車打芝士、傑克芝士和甜椒乾酪等美國化的食材。
術語[編輯]
TexMex（無連字符）一詞最早來自得克薩斯墨西哥鐵路的縮寫。[7]在1920年代，美國報紙使用Tex-Mex（有連字符）一詞來表示有墨西哥血統的得克薩斯人。[7][8]
1960年，美國出版社和報業的文章中開始用Tex-Mex來指代一類食譜，包括了辣豆醬和安吉拉捲。食譜還建議使用玉米麵薄煎餅代替墨西哥薄餅，因為當時得州以外的美國人難以獲得墨西哥薄餅。[9][10]在牛津英語詞典的收錄中，頭兩次用於指代菜餚的TexMex的文章來自1963年的紐約時報雜誌和1966年的堪薩斯Great Bend每日論壇報的文章。[11] 美食作家Diana Kennedy在其1972年出版的《墨西哥美食》書中解釋了墨西哥菜和美國化墨西哥菜之間的區別。[12]
